Remember Anjali? She’s back with an update on how the Tau Sigma Gamma GoGo Challenge is chugging along and, as promised, she brought us the Pumpkin Oatmeal Applesauce Muffin recipe she mentioned last post. We don’t know about you but we’re excited to get baking… Here’s Anjali!GoGo Challenge Part 1 - Anjali

It’s time for midterms and you know what that means… Coffee, coffee, possibly an energy drink, but definitely more coffee! Regardless of our impending academic endeavors and challenges, there is one challenge we have not forgotten. The Tau Sigma Gamma #GoGoChallenge! The GoGo Challenge has actually been quite handy and super dandy for late night library trips and… OK, you got us. We aren’t always being super studious, and some of us divas need a break from the books every now and then. These breaks, however, aren’t about catching up on television shows and gossiping (k, maybe SOME gossiping). But, we’re generally a lot niftier than that. We cook, we bake, and we GoGo!

Our sister MK – who you met last post – knew a Pumpkin Oatmeal Applesauce Muffin recipe which she decided to tweak. How’d she tweak it, you ask? Naturally, she replaced the applesauce with GoGo squeeZ. After all, we all know that GoGo squeeZ is so much more than just applesauce (it’s awesomesauce). Some of us got together and did some mid-study baking. Result? A few rested brains and a lot of happy tummies. A happy Tau Sig tummy is a happy Tau Sig sister. Without further ado, the Pumpkin Oatmeal Applesauce Muffin recipe you’ve all been waiting for (click the pic for a printable version)!:

Pumpkin Oatmeal Applesauce Muffin RecipeIngredients:
2 cups whole wheat flour
2 cups oats
3 tsp baking powder
1 tsp baking soda
1/2 cup water
1 cup chopped pecans
2 tsp pumpkin spice
3 pouches of GoGo squeeZ AppleApple or 2 pouches GoGo squeeZ AppleCinnamon (we tried both)
1 cup pumpkin puree
oil or cooking spray

Instructions:

  1. Preheat oven to 350°F.
  2. Grease muffin pans (24 total muffins).
  3. Mix all dry ingredients (except for nuts).
  4. Mix wet ingredients and slowly add to dry ingredients. Stir thoroughly.
  5. Fill muffin cups 2/3-3/4 full.
  6. Toast pecans on skillet or in oven.
  7. Place a few toasted pecans on the top of each muffin.
  8. Bake for approximately 25 minutes.
  9. Enjoy!
